Caviar has always been considered a luxurious and expensive delicacy. The high price was also the reason why caviar became a product for few and privileged people. In addition, its rarity placed it in the elite of luxury products. Fortunately things have changed and almost all people can now buy caviar of very good quality and at a very good price.
But what exactly is caviar? The majority still thinks that caviar is a product of all kinds of fish, and that belief of course is wrong. According to the FDA, real caviar comes only from sturgeon eggs, which are found in about 29 different species.
The best
caviar processing techniques were developed in Russia, as the Beluga and
Ossetra sturgeon lived for centuries in the Caspian and Black Seas. The best
known technique is Malossol which means "a little salt". The value of
this product and the profits are very high and as a result the hunt for profit
led to overfishing of the species and eventually placed them under the threat
of extinction. For this reason the importation of Beluga caviar into the United
States is considered illegal.
However,
the love for this delicacy, the growing demand and the respect for the species
made many serious and responsible companies to find and adapt ecological
solutions and to develop hatcheries that follow the procedures and provide the
sturgeon with the ideal conditions to live and reproduce.
There are
many ways to enjoy caviar, but all those who know the genre advise you to try a
small spoon without chewing it first. The spoon should be made of natural
materials and not metal.
